Cranberry Pasta Salad Sauce by Tina Spagnolo


  • 2 cups cranberries
  • 1 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar or berry vinegar
  • salt & pepper to taste
  • cashews, chopped (optional, but healthier with!)
  • olives, chopped.
  • 1 clove garlic, pierced
  • onion powder or 1/4 an onion finely chopped.

Putting it All Together

  1. Mix all ingrediants
  2. Let it sit over night to let the flavors meld. 
  3. Pour over 1 ½ to 2 pounds of pasta
  4. Stir
  5. Enjoy!
